Strawberry Smoothie

Ingredients

  • 1 cup skim milk
  • 1 cup fresh strawberries
  • 2 tablespoons flaxseed oil

Method

In a blender, combine the skimmed milk with the strawberries and whiz them until you get a smooth liquid. Pour this into a glass and stir in the flaxseed oil.

Salmon Sandwich

Ingredients

  • 2 slices whole wheat bread
  • 2 tablespoons black olive tapenade
  • ½ cup Alaskan salmon, steamed and flaked
  • ½ cup cherry tomatoes, sliced
  • 2 romaine leaves

Method

Spread the black olive tapenade over the whole wheat bread slices and then arrange the flaked salmon over it. Top it with sliced cherry tomatoes and romaine leaves.

Chilled Chicken Pasta

Ingredient

  • ¼ cup whole wheat penne pasta
  • 1 tablespoon pesto sauce
  • ½ cup shredded grilled chicken breast
  • ½ cup cherry tomatoes, halved
  • ½ cup grated carrot
  • 2 tablespoons grated cheese

Method

Cook the penne pasta in boiling water for 5 – 6 minutes until they are al dente. Drain pasta and place them in ice-cold water. In a medium bowl, add the pasta along with the cherry tomatoes, grated carrot, shredded chicken breast and pesto sauce and toss well. Add the grated cheese and enjoy this delicious chicken pasta.
